Summertime is the ideal season for ripe, fresh fruit, and strawberries are the star of the show. These juicy, red berries are delicious for breakfast, on a cheese plate, and when incorporated into desserts.

Nothing beats a classic like strawberry shortcake when celebrating the Fourth of July holiday with friends and family. But instead of baking the base for your shortcakes in the oven, why not utilize your Solo Stove Pi pizza oven instead? This recipe creates soft, fluffy biscuits to build the most festive dessert. You could even set up a strawberry shortcake station, allowing your kids or party guests to build their own! With layers of cake, whipped cream, and fresh strawberries, it’s a taste of summer in every bite.

Makes 4 Strawberry Shortcakes

Equipment

Pi Pizza Oven, cast iron skillet

Ingredients

For the Cakes:

2 cups all-purpose flour
¼ cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 stick unsalted butter, cold
1 egg
¼ cup sour cream
3 tablespoons milk

For the Berries:

1 ½ cups sliced fresh strawberries
¼ cup granulated sugar
Store-bought or homemade whipped cream

Step 1: Prep the Strawberries

In a small bowl, combine the strawberries and sugar. Transfer to the fridge and let sit while you make the shortcakes.


Step 2: Mix the Dry Ingredients

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.


Step 3: Grate the Butter


Use a cheese grater to grate the cold butter into the flour mixture. Mix with a fork until the butter is incorporated and the mixture is crumbly.


Step 4: Finish the Dough

Use a wooden spoon or spatula to mix in the egg, sour cream, and milk. Knead the dough with your hands to bring it together.

Step 5: Shape the Dough

On a well-floured surface, roll out the dough to 1/2-inch thick. Use biscuit cutters or the mouth of a glass to cut four cakes out of the dough. Place the cakes on a plate and chill in the fridge for 20 minutes.

Step 6: Fire Up the Pi Pizza Oven

While the dough is chilling, preheat the Pi Pizza Oven. Turn on the pizza oven, then turn the temperature down to low.

Step 7: Bake the Cakes

Transfer the chilled cakes to a cast iron skillet. Cover the skillet with aluminum foil and bake the cakes in the pizza oven for 20 minutes. After 20 minutes, remove the aluminum foil, turn off the pizza oven, and let the cakes finish baking with the residual heat for an additional 5 minutes. Remove the cakes from the oven to cool.

Step 8: Assemble the Strawberry Shortcakes

Cut each shortcake in half and top the bottom piece with a layer of sliced strawberries and a spoonful of whipped cream. Add the top piece, and finish the dessert with additional strawberries and whipped cream.
