While Solo Stove’s Pi Prime pizza oven can crank out homemade pies in no time, we like to stretch things even further to see what else can be cooked in this versatile oven. For something equally melty and cheesy, we’re making loaded nachos to feed a crowd — and it’s easier than you think. Cook ground beef and sauteed onions in the pizza oven using a cast iron skillet, and then get ready to layer it all up! The heat from the pizza oven will melt the cheese in no time, leaving you with the ultimate nachos that are just begging to be piled high with all of your favorite toppings.

Loaded Cast Iron Nachos

Equipment

Pi Prime Gas Pizza Oven, Pi Cast Iron 12” Round Skillet

Ingredients

Tortilla chips

1 pound lean ground beef

1/2 of a red onion, diced

Salt and pepper, to taste

1 (15-ounce) can black beans

1 (8-ounce) bag shredded cheese

1 avocado

Sour cream

Cilantro, minced

Step 1: Preheat the skillet

Fire up Pi Prime on high. Place the empty cast iron skillet in the pizza oven and allow it to preheat for 10 minutes.

Step 2: Cook the ground beef

Once preheated, remove the cast iron and place it on the stainless steel base. Add the onions and ground beef. Use the heat from the cast iron to begin cooking the ground beef, breaking it up into little crumbles with a wooden spoon. Season with salt and pepper. Return the cast iron to the pizza oven to finish cooking the ground beef until browned, about two minutes.

Step 3: Layer the nachos

Remove the skillet from the pizza oven. Transfer the cooked ground beef and onion mixture to a bowl. Stir in the black beans. Create a layer of tortilla chips on the base of the cast iron skillet. Top with the ground beef mixture, and then a layer of cheese. Repeat this step, finishing with cheese on top.

Step 4: Melt the cheese

Turn the pizza oven off. Place the cast iron skillet in the oven. Keep a close watch and allow the residual heat to melt the cheese, about two minutes.

Step 5: Pile on the toppings

Top the nachos with avocado, sour cream, and minced cilantro. Feel free to get creative with other toppings such as diced tomatoes, black olives, jalapenos, or a chipotle crema sauce.
