Italian Grinder Pizza
Aug 8, 2023By Molly AllenHeading to a sub shop, there are a variety of combinations for sandwich toppings. But there’s one that always reigns supreme: the Italian grinder. These subs are piled high with meats, cheeses, tomatoes, and peppers to serve up a sandwich that’s packed full of flavor with a touch of spice. Now, we’re using that as inspiration for the ultimate pizza.
This pizza is topped with salami and capicola, with a blend of mozzarella and parmesan cheese. It’s amped up with red onion and pepperoncinis, and the secret ingredient to take it to the next level? A sprinkle of Italian seasoning just before it goes into the oven.
Makes 1 pizza
Equipment
Pi Prime Pizza Oven, Pizza Docker, Pi Prep Board
Ingredients
Red sauce
3 slices salami, cut into triangles
4 slices capicola, cut in half
¼ red onion, thinly sliced
¼ cup pepperoncinis or banana peppers, sliced
Shredded mozzarella cheese
Shredded parmesan cheese
2 teaspoons Italian seasoning
Directions
Step 1: Preheat Your Pi Prime Oven
Fire up your pizza oven. Allow it to preheat for at least 20 minutes.
Step 2: Stretch Your Dough
Use a Solo Stove dough ball or your favorite homemade pizza dough. Sprinkle flour on the prep board, stretch the dough, and use the docker tool to gently roll across the top of your dough. Transfer the dough to a floured pizza peel.
Step 3: Add Sauce
Spread your favorite red sauce on the stretched dough.
Step 4: Add Your Meat
Top the base with slices of capicola and salami.
Step 5: Add Your Cheese
Sprinkle shredded mozzarella and shredded parmesan cheese on top of the meat.
Step 6: Add Your Veggies
Add red onion and pepperoncinis on top of the cheese and finish the pizza with a sprinkle of Italian seasoning.
Step 7: Cook the Pizza
Time to fire! Launch the pizza into the Pi oven and allow it to set for 20 to 30 seconds to cook the base. Then, turn the pizza throughout cooking for even browning. Cook time should be about 90 seconds to two minutes.
Step 8: Slice and serve
Remove the pizza from the oven, slice it with a pizza rocker, and dig in!
