Halloween Snickerdoodle S’mores

Gather with your family and friends to make these Halloween-themed s’mores for even more festive fun. They’re made with soft, chewy homemade snickerdoodle cookies as the perfect base to pair with a square of caramel-filled chocolate. Making them for Halloween? Choose ghost-shaped Peeps as your marshmallows. Once they’re roasted, the outside crystallizes for a unique crunch. Planning to make them for another day? Use regular marshmallows and embrace the flavors of fall.

Ingredients
For the Snickerdoodle Cookies:
1/2 cup butter
3/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup granulated sugar cup
2 teaspoons cinnamon
For the S’mores:
Peeps Halloween Ghost Marshmallows (or regular marshmallows)
Ghirardelli caramel-filled chocolate squares (or other chocolate)
Step 1: Mix the wet ingredients
Preheat your oven to 350 degrees. In a bowl with a hand mixer or the bowl of a stand mixer, cream the butter and sugar. Mix in the egg and vanilla.
Step 2: Add the dry ingredients
Whisk together the flour, baking powder, baking soda, and salt in a separate small bowl. Mix the dry ingredients into the butter mixture, mixing until the dough comes together.
Step 3: Scoop the cookie dough
Line a baking sheet with parchment or grease it with cooking spray or butter. Mix together the additional sugar and cinnamon in a small bowl. Scoop tablespoon-sized balls of cookie dough, roll them until smooth, and coat them in the cinnamon sugar mixture. Place the balls of dough, gently flattening each, on the prepared baking sheet, 12 to a sheet.
Step 4: Bake the cookies
Bake the cookies for 12-14 minutes until the edges just turn golden. To keep the cookies soft, remove them from the oven and allow them to set and cool on the baking sheet on top of the stove.
Step 5: Make the s’mores
Start a fire in your Mesa tabletop firepit. Of course, you could also use another size to roast your marshmallows including Bonfire, Ranger, or Yukon. Roast a Peeps Halloween marshmallow or regular marshmallow, and assemble your s’mores. Use a Snickerdoodle cookie as the base, place a caramel-filled chocolate square on top, add the roasted ghost Peep, and top with another cookie before digging in!
