Glazed Pumpkin Scones
Oct 2, 2023By Molly AllenFall brings cooler weather as the seasons change. And while plenty of pizzas are still on the menu, we’re turning to a classic fall flavor for the ultimate seasonal treat. Pi Prime meets pumpkin spice with these pumpkin scones baked in your pizza oven.
These scones are pillowy-soft, fluffy, and packed with pumpkin spice flavor. The dough is simple to make, and they’ll cook in Pi Prime in under 20 minutes. Dress them up with a cream cheese glaze as the ideal complement and enjoy them with family or friends on a cool fall evening or a cozy Sunday morning.
Equipment
Pi Prime Gas Pizza Oven, Pi Cast Iron 12” Round Skillet
For the Scones:
2 cups flour
¼ cup brown sugar
1 tablespoon baking powder
¼ teaspoon salt
4 teaspoons cinnamon
2 teaspoons nutmeg
½ teaspoon clove
1 stick unsalted butter, cold
1 egg
1/2 cup pumpkin
4 tablespoons milk
For the Glaze:
½ block (4-ounces) cream cheese, softened
4 tablespoons milk
3 cups powdered sugar
Step 1: Mix the Dry Ingredients
In a mixing bowl, whisk together the flour, brown sugar, baking powder, salt, cinnamon, nutmeg, and clove until well combined.
Step 2: Grate the Butter
Use a cheese grater to grate the cold butter into the flour mixture. Mix with a fork or your hands until the butter is incorporated and the mixture is crumbly.
Step 3: Finish the Dough
Use a wooden spoon or spatula to mix in the egg, pumpkin, and milk to form a soft dough.
Step 4: Shape the Dough
Transfer the dough to a well-floured surface. Knead the dough with your hands to bring it together. Work in enough flour that it’s not sticky to touch. Form the dough into a small circle. Cut it into 6 triangles. Place the scones in a greased round cast iron skillet and place the skillet in the fridge to allow the dough to chill for 20 minutes.
Step 5: Fire Up the Pi Prime Pizza Oven
While the dough is chilling, preheat the Pi Prime Pizza Oven. After preheating the pizza oven on high, turn the temperature down to low.
Step 6: Bake the Scones
Cover the skillet with aluminum foil and bake the cakes in the pizza oven for 15 minutes. After 15 minutes, remove the aluminum foil, turn off the pizza oven, and let the scones finish baking with the residual heat for an additional 5 to 10 minutes. Remove the scones from the oven to cool.
Step 7: Make the Glaze
While the scones are cooling, make the glaze. Whip the cream cheese in a medium bowl with a hand mixer or the bowl of a stand mixer. Mix in the powdered sugar and milk and whip until smooth. Drizzle the glaze over the cooled scones.
