Easy Strawberry Crisp

There’s a time and a place for an elaborate dessert, like a cake with multiple layers or a dreamy combination of chocolate and cream in fancy eclairs. But most of the time, we’re reaching for easy desserts that pack a flavorful punch like this strawberry crisp.

Because Pi Prime is for so much more than just delicious pizzas, we’re baking the ultimate comfort treat to share with those you love. It’ll come together in just 30 minutes using simple ingredients, and served warm straight out of the cast iron skillet, it’s just begging for a scoop of your favorite ice cream or gelato to top it all off.

Ingredients

For the Berries

2 pounds fresh strawberries, halved

1/4 cup brown sugar

3 tablespoons all-purpose flour

2 tablespoons water

Zest of half of a lemon, optional

For the Crisp Topping

1 cup all-purpose flour

2/3 cup oats

2/3 cup brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

8 tablespoons unsalted butter, melted


Step 1: Fire Up Your Pizza Oven

Preheat Pi Prime with the flame dialed down to low for 20 minutes.

Step 2: Prep the Strawberries

In a medium bowl, add the strawberries, brown sugar, flour, water, and lemon zest. Stir until combined.

Step 3: Mix the Dry Ingredients

In a mixing bowl, whisk together the flour, oats, brown sugar, baking powder, and salt until well combined.

Step 4: Add the Melted Butter

Pour the melted butter into the dry ingredients mixture. Use a fork to mix until combined, forming large clumps.

Step 5: Assemble the Crisp

Lightly grease the cast iron skillet. Pour the strawberries into the cast iron to create an even base layer. Cover with the crisp topping.

Step 6: Bake the Crisp

Once the pizza oven has preheated, with the temperature near 500° F, it’s time to bake! Cover the cast iron skillet with aluminum foil. Bake the crisp, covered, for 20 minutes until the strawberries are bubbly and soft. Remove the aluminum foil and bake an additional 2 to 3 minutes until the top is golden. Serve warm with a scoop of vanilla ice cream or gelato.
