Chocolate Peanut Butter Lovers S’mores

Nothing beats gathering around a glowing fire, making memories with family and friends. That is, of course, unless you add s’mores to the mix. They’re typically made with graham crackers, chocolate, and a marshmallow that’s roasted perfectly to your liking. But we’re kicking this classic treat up a notch.

A marshmallow roasted over your firepit is still the star of the show here, but we’re swapping regular chocolate for peanut butter cups. Even better? Homemade peanut butter chocolate chip cookies to hold it all together. You can use the recipe below to make the cookies from scratch at home ahead of time, and then bring them with you wherever you’re having a fire, whether that’s in the backyard or a campground. Short on time? Use the same idea but pick up store-bought peanut butter cookies or use pre-made cookie dough for similar results.

Ingredients

½ cup butter, softened

1/3 cup white sugar

2/3 cup brown sugar

1 egg

½ cup peanut butter

1 1/2 cups flour

½ teaspoon baking soda

½ teaspoon salt

½ cup mini chocolate chips

Step 1: Mix the wet ingredients

Preheat your oven to 350 degrees. In a bowl with a hand mixer, or the bowl of a stand mixer, cream the butter, white sugar, and brown sugar. Mix in the egg, then mix in the peanut butter.

Step 2: Add the dry ingredients

In a separate small bowl, combine the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients, mixing until the dough comes together. Mix in the mini chocolate chips.

Step 3: Scoop the cookie dough

Line a baking sheet with parchment or grease it with cooking spray or butter. Scoop tablespoon-sized balls of cookie dough, roll them until smooth, and place them on the prepared baking sheet, 12 to a sheet.

Step 4: Press and bake the cookies

Use the tines of a fork dipped in sugar to gently flatten the balls of dough to create a crisscross pattern. Place the baking sheet in the fridge to chill the dough for 10 minutes, and then transfer it to the oven. Bake the cookies for 12-15 minutes until the edges just turn golden. To keep the cookies soft, remove them from the oven and allow them to set and cool on the baking sheet on the stovetop.

Step 5: Make the s’mores

Start a fire in your Bonfire firepit. Of course, you could also use another size to roast your marshmallows including Mesa, Ranger, or Yukon. Roast a marshmallow and assemble your s’mores. Use a peanut butter cookie as the base, place a peanut butter cup on top, add the marshmallow, and top with another cookie.
