Chipotle Cajun Shrimp Pizza
Jul 19, 2023By Ty HancockIt’s fiesta time. No, wait. It’s Mardi Gras time. Well, some fiestas are typically going on during Mardi Gras, right? Why not combine some of the flavors of both into a single pizza? It seems only fitting that historically Italian food should be the proverbial vehicle by which this flavor explosion gets delivered to your mouth. Pairs nicely with a tasty elixir of your choice.
Equipment
Ingredients
Shrimp:
Uncooked, peeled, medium shrimp (41-50) or similarly sized
Garlic powder
Chipotle chili powder
Blackening seasoning
Butter
1 diced jalapeno
Salt to taste
Corn Salsa:
1 C sweet white corn kernels
½ Diced red onion
½ C Cilantro, roughly chopped
½ Jalapeno, diced
1 Lime, juiced
Additional Toppings:
2 Tblsp. Olive oil
1 tsp. Crushed red pepper
1 ½ C Oaxaca cheese, grated
Mexican Crema
Guacamole
Queso fresco
Cooking the shrimp:
1 - First, ensure your shrimp are properly cleaned and peeled. Pat them dry with a paper towel.
2 - Season the shrimp evenly in a bowl with garlic powder, chipotle chili powder, blackening seasoning, and a pinch of salt (if desired). Ensure each shrimp is well coated for maximum flavor.
3 - Heat your large frying pan over medium-high heat. Once the pan is hot, add a couple of tablespoons of butter to it. Allow the butter to melt and coat the bottom of the pan.
4 - Add the diced jalapeno to the pan once the butter has melted. Saute the jalapeno for about 1-2 minutes, until it's slightly softened and aromatic.
5 - Add your seasoned shrimp to the pan in a single layer, ensuring they aren't overcrowded. If necessary, you may need to cook the shrimp in batches.
6 - Cook the shrimp for about 2 minutes on one side, then flip each shrimp over to cook on the other for another 1-2 minutes. The shrimp should become pink and opaque when they're done.
7 - Once the shrimp are cooked, remove them from the heat immediately to prevent overcooking
8 - In a bowl, combine corn, diced red onion, jalapeno, cilantro, and lime juice to make the corn salsa.
Build Your Pizza:
1 - Stretch your dough to your desired size (Pi and Pi Prime can handle up to 13” pizzas).
2 - Drizzle olive oil over the stretched dough, and spread it evenly, leaving around ½” from the edges for the crust.
3 - Spread the shredded Oaxaca cheese over the dough.
4 - Evenly place the shrimp around the pizza. Use as much or as little as you like. For smaller shrimp, you may want to use more.
5 - Now cook that sucker for approximately 90 seconds in the Solo Stove Pi Prime.
Garnishing Your Pizza:
1 - Drizzle the Mexican Crema over the pizza using a squeeze bottle.
2 - Drop a dollop of guacamole into the center of the pizza.
3 - Finish with a sprinkle of corn salsa.
