Cajun Salmon Skewers

Ingredients
1 pound (454 g) boneless, skinless salmon fillet, cut into 1½-inch (3.8-cm) cubes
2 teaspoons (4 g) Cajun seasoning
2 zucchini, cut into ½-inch (1.3-cm) chunks
1 small red onion, cut into 1-inch (2.5-cm) chunks
1 tablespoon (15 ml) vegetable oil
Sea salt, to taste
Freshly ground black pepper, to taste
Step 1: Soak the Skewers
Soak 8 wooden skewers in water for 30 minutes.
Step 2: Season Salmon and Veggies
Place the salmon in a medium bowl and toss with the Cajun seasoning until the chunks are coated. Then, place the zucchini, onion, and oil in a small bowl, season with salt and pepper, and toss to evenly coat.
Step 3: Prepare the Skewers
Thread the salmon, zucchini, and onion onto the skewers, alternating the fish with the vegetables.
Step 4: Cook it
Arrange the salmon skewers on the grill and cook until the fish is opaque and the vegetables tender, turning halfway through, about 10 to 12 minutes in total.
Step 6: Serve
Serve 2 skewers per person.
