Banana Pancake S’mores Roll-Ups
Jun 19, 2023By Molly AllenSummertime is the season for s’mores, and nothing compares to gathering around a fire pit with friends and family to roast the perfect marshmallow. While graham crackers and chocolate serve as a classic base for s’mores, there are plenty of other foods that pair well with a gooey golden marshmallow — even leftovers!
Whether camping or in the backyard, this is the ideal use for leftover pancakes and bacon from breakfast. If you have extra batter, cook it off and use those pancakes as the base for s’mores later in the day! We used an easy banana pancake recipe for these s’mores roll-ups, but any pancakes will do. Add a roasted marshmallow, a piece of chocolate, and a slice of your leftover bacon from breakfast for the ultimate s’mores combo that’s bursting with flavor.

For the Banana Pancakes
1 1/4 cups flour
3 tablespoons brown sugar
2 teaspoons baking powder
½ teaspoon salt
2 teaspoons cinnamon
1 egg
1 cup milk
3 tablespoons oil
2 ripe bananas, mashed
For the S’mores Roll-Ups
Cooked bacon
Marshmallows
Chocolate
Step 1: Build a Fire
Build a fire in your Solo Stove fire pit. Start by burning 4 to 6 logs, allowing them to reduce to hot coals. Set up the cooking hub with the griddle on top.
Step 2: Make the Banana Pancake Batter
Whisk together the dry ingredients. Mix in the egg, milk, and oil. Mix in the mashed bananas.
Step 3: Cook the Banana Pancakes
Butter the top of the griddle. Cook the pancakes and set them aside to cool.
Step 4: Cook the Bacon
Cook slices of bacon on top of the griddle and set aside to cool.
Step 5: Assemble the S’mores Roll-Up
Roast a marshmallow over the fire. Construct a s’mores roll-up by putting the roasted marshmallow in a banana pancake. Add chocolate and small slices of bacon.
